Gluten Free Kid Friendly Lunches
Today I have some kid friendly lunch options for you. It can be really tough finding lunch food for gluten free kids. So I have two recipes for you today.

Reuben Wraps
- 4 ounces Philadelphia cream cheese, softened
- 2 (10 inch) corn tortillas
- 3 ounces corned beef, thinly sliced
- 3 ounces pastrami, thinly sliced
- 8 slices Swiss Cheese, thinly sliced
- 2 tablespoons coarse grain gluten free mustard, (De Rit or Grey Poupon)
- 2 tablespoons Kraft Thousand Island salad dressing
- 1/2 cup sauerkraut, well drained
Place corn tortillas in a clean damp dish towel and microwave for 15 seconds, or until soft and plyable. Spread equal amounts of cream cheese over the corn tortillas. Then layer equal amounts of the corned beef, pastrami, swiss cheese, mustard salad dressing and sauerkraut on each tortilla. Leave 4 inches on one end covered only with cream cheese. Beginning at the layered end, roll the tortillas up very tightly. Slice and wrap in plastic wrap. These can be prepared the night before, to help save time in the mornings.
Philly Steak and Cheese Wraps
- 6 (10 inch) corn tortillas
- 1 onion
- 1 tablespoon butter or olive oil
- 1 red bell pepper, cut into strips
- 1 green bell pepper, cut into strips
- 1/2 teaspoon garlic powder
- 2 Cups Kraft American Cheese, cubed
- 6 ounces deli roast beef, thinly sliced and cut into 2 inch strips
Melt butter in a large skillet over medium heat. Meanwhile, peel the onion and cut in half through the stem end and slice into half rings. Add the onion and bell peppers to the butter and cook for about 6 to 8 minutes, until onions are golden in color and peppers are soft, but not mushy, stirring occasionally. Remove from heat and add the garlic powder, cheese and roast beef. Mix well.
Place corn tortillas in a clean damp dish towel and microwave for 15 seconds, or until soft and plyable. Spoon 1 cup of the mixture onto the center of each tortilla. Fold 1 edge of the tortilla over the filling toward the center, then roll to enclose the filling. Although these will be cold they are my favorite for lunch.
You can also serve these warm for dinner. Just place the filled wraps seam side down on a microwave safe dish and microwave on high for about 1 to 2 minutes or until heated through.
With both of these wraps, just add a piece of fruit and a cup of milk and you have servings of all 4 food groups.

My son is on a gluten free diet, however I have found it difficult to feed him. He is very picky. I would like to know what flour you would recommend. My daughter has a rice allergy so we can’t use rice flour.
