  1. Combine avocado, cashews, water, cilantro, garlic, 1/2 teaspoon salt, and lime juice in a food processor and pulse until smooth.
  2. Heat grill to medium high heat and brush corn with olive oil. Wrap in foil.
  3. Wash romaine lettuce, cut it in half length-wise, brushing with olive oil.
  4. Grill corn for 15 minutes, then add lettuce directly to grill for an additional 5 minutes.
  5. Cut stem from romaine lettuce and chop. Cut corn from the cob and add to romaine lettuce, along with the dressing.
  6. Toss and serve. Enjoy!
