So yesterday for lunch I had an Amy’s Bowls frozen thing. I almost never indulge in processed foods, but after being away for the past 5 days, and heading right back to work the next morning, there isn’t a whole lot of lunch type food in the house. So I ran into Walmart on the way to work yesterday morning and chose Amy’s Broccoli & Cheddar Bake.
 
It’s gluten-free, non-GMO, organic, and amazingly delicious! It was so good, I told my husband I could absolutely have eaten a second one.
 
The downside, the 420 calories, the 640 mg of sodium, the 44 grams of total carbohydrates, with only 2 grams of dietary fiber.

However, that being said, I cannot forget how yummy this was. So my mission this weekend, will be to recreate this delicious, processed food to make it taste just as delicious, but with a healthier spin to it.
It was gooey with melted English cheddar cheese sauce, had crisp broccoli pieces mixed in with the rotini or fusilli pasta, (not sure what to call it since I’ve seen it called both), with crunchy gluten-free bread crumbs sprinkled on top. It was ready in just 5 minutes in the microwave.
