Recipe - Broccoli Cheese Party Quiches

These little hors d'oeuvres or appetizers are as delicious as they are easy to make. The best thing is that they can be made ahead of time and then reheated in a 350 degree F. oven for 10 minutes.

  • 1 Can Evaporated Milk Not Sweetened condensed Milk
  • 3 Large eggs Beaten
  • 2 Tablespoons All Purpose Gluten Free Flour Mix
  • 1/4 Teaspoon salt
  • 1/4 Teaspoon black pepper
  • 2 Cups Sharp Cheddar Cheese Finely Shredded
  • 2 Cups Frozen Chopped Broccoli thawed and drained
  • 1/2 Cup Red Bell Pepper Finely Diced


  • Preheat oven to 350 degrees Fahrenheit.
  • Grease and lightly flour 12 mini-muffin cups.
  • Whisk together until blended, evaporated milk, eggs, flour, salt, and black pepper in a medium bowl.
  • In a separate bowl, combine the cheddar cheese, the thawed and drained broccoli, and the bell pepper.
  • Spoon 1/8 cup of vegetable/cheese mixture into the muffin cups, filling almost to the top.
  • Using a 1/4 cup measuring cup, pour egg mixture into the muffin cups over the top of the vegetable mixture, filling in around vegetable mixture with the egg mixture.
  • Once all muffin cups are filled, lightly stir the ingredients together to keep them evenly mixed.
  • Bake for 25 to 30 minutes, until a knife inserted into the center comes out clean and the tops are lightly brown.
  • Cool in pans for about 15 minutes. To remove from pans, run a knife around the inside edges of the muffin cups. Remove quiches carefully.
