Ingredients
- 1 1/4 Cups All Purpose cup for cup gluten-free flour
- 2/3 Cup Coconut Sugar
- 3/4 teaspoon Baking Soda I use Rumsford Brand (no aluminum) and gluten-free
- 1/4 teaspoon salt
- 3/4 cup applesauce
- 1/3 cup vegetable oil I use Extra Virgin Olive Oil or Fractionated Cooking Coconut Oil
- 1/2 teaspoon Gluten-free Vanilla

Instructions
- Preheat oven to 350 degrees and grease a 9 inch round or and 8 inch square pan
- Sift the flour, sugar, soda, and salt together until well mixed.
- Mix the applesauce, vanilla, and oil in a large bowl; add the dry ingredients to the wet and stir until all of the flour is just moistened.
- Spread the batter the greased cake pan.
- Bake for 30 minutes or until a toothpick inserted into the middle of the cake comes out clean.
