family reunions. The original recipe came from his Aunt Peg. I have since altered it to ensure a gluten-free win.

Recipe - Gluten-Free Cinnamon Swirl Cake
This is a moist and delicious cinnamon swirl cake. This is not a light or low calorie cake, but it is gluten-free and flavorful.

Cake Batter
  1. Preheat oven to 350 degrees.
  2. In the large mixing bowl of a stand mixer, combine cake mix, lemon pudding mix, water, melted butter, vanilla and sour cream.
  3. Turn mixer on low and add eggs one at a time.
  4. Beat mixture for 10 minutes on medium. Scraping the sides of the bowl frequently.
  5. Grease and gluten-free flour your cake pan.
Streusel Swirl Mixture
  1. In a small bowl combine the brown sugar, cinnamon and walnuts (if using). Set aside.
  2. Pour half of your cake batter into your greased cake pan. Spread evenly over pan.
  3. Sprinkle half of the cinnamon/brown sugar/nut mixture over the top of the batter.
  4. Pour the remaining half of the cake batter over the streusel mixture. Spread as evenly as you can.
  5. Now sprinkle the rest of the streusel mixture over the top.
  6. Using a butter knife, swirl topping through cake batter. This is what will give you those pretty swirls when you cut it.
  7. Bake in 350 degree oven for 40 to 50 minutes or until a cake tester comes out clean.
  8. Remove cake from oven and cool in pan for 20 minutes on a cooling rack.
  9. Using a plate, turn cake out of pan. Then using your decorative plate turn cake right side up on your decorative plate. Allow to cool completely.
Icing (Optional)
  1. In a small bowl, combine the confectioners sugar, water or milk and vanilla. Stir together until smooth with no lumps. You can add more water or milk if mixture is too thick, but just add a little at a time.
  2. Using a spoon, drizzle icing over top of cake.
