Instructions
  1. Put ginger, garlic, mint and coriander into a blender or food processor and process until smooth.
  2. Pour into a zip top plastic bag.
  3. Add the salt, pepper, and oil. Smoosh the bag to combine the ingredients.
  4. Add the chicken cubes, and zip the bag shut, making sure to squeeze as much air from the bag as possible.
  5. Refrigerate overnight.
  6. Next day, thread the chicken cubes onto skewers. Leaving space between the chicken cubes.
  7. When ready to cook, fire up your grill and place the chicken skewers onto the grill grates.
  8. Cook on one side for 3 to 5 minutes, flip and cook on the other side, until a meat thermometer reads 165 internal temperature.
  9. Serve with your choice of sides.

Recipe Notes

Cook's Tips:

  • If using wooden skewers, be sure to soak in warm water for an hour before skewering the chicken. This will ensure that your wooden skewers won't burn.
  • For a variation, you can also place onion wedges in between the chicken pieces.
