  1. Spray trays of air fryer with gluten-free non stick spray.
  2. In a small bowl, combine the cornstarch, paprika and salt.
  3. In another bowl, whisk together the buttermilk and eggs. Add half of the flour mixture and beat until smooth and thickened.
  4. In a third bowl, combine the breadcrumbs, and olive oil.
  5. Cut chicken breasts into bite sized pieces.
  6. Thoroughly coat the chicken breast pieces in the cornstarch mixture. Then dip into buttermilk mixture. Let excess buttermilk mixture drip off before coating in the bread crumb mixture.
  7. Place coated chicken pieces onto air fryer trays evenly spaced. Spray chicken pieces with gluten free non stick spray.
  8. Set air fryer to 400 degrees F. and air fry for 16 minutes. Enjoy!
