Ingredients
- 2 Cups Corn Starch
- 2 Teaspoons Smoked Paprika
- 2 Teaspoons salt
- 1 Teaspoon Granulated Garlic
- 1 Teaspoon Granulated Onion
- 2 Boneless Chicken Breasts
Wet Mix
- 2 Cups Buttermilk
- 2 eggs Beaten
- 1 Teaspoon Mayonnaise optional
Crumb Mix
- 2 Cups Bread crumbs I used 4 C Gluten-free seasoned
- 2 Tablespoons olive oil

Instructions
- Spray trays of air fryer with gluten-free non stick spray.
- In a small bowl, combine the cornstarch, paprika and salt.
- In another bowl, whisk together the buttermilk and eggs. Add half of the flour mixture and beat until smooth and thickened.
- In a third bowl, combine the breadcrumbs, and olive oil.
- Cut chicken breasts into bite sized pieces.
- Thoroughly coat the chicken breast pieces in the cornstarch mixture. Then dip into buttermilk mixture. Let excess buttermilk mixture drip off before coating in the bread crumb mixture.
- Place coated chicken pieces onto air fryer trays evenly spaced. Spray chicken pieces with gluten free non stick spray.
- Set air fryer to 400 degrees F. and air fry for 16 minutes. Enjoy!
