When my husband was a child, he was allergic to milk and eggs. I don’t know if my mother-in-law made this recipe up, or just altered it, but she would make these cookies every year for her little boy so that he could have some Christmas cookies to eat and although the name on the actual recipe is New Northland Cookies, they have become known in our family as Jimmy Cookies

Christmas Jimmy Cookies

These are a yummy cinnamon flavored refrigerated slice cookie. They are gluten-free, milk free and egg free. They can be made completely dairy free by using butter flavored shortening instead of butter.

Ingredients
  

  • 3 Tablespoons Shortening Softened
  • 3 Tablespoons Butter Softened
  • 1 Cup Brown Sugar
  • 1/4 Cup Cold Water
  • 1 3/4 Cup Gluten-Free 1 to 1 Flour
  • 1 Teaspoon Baking Soda
  • 1/2 Teaspoon salt
  • 1 Teaspoon ground cinnamon

Instructions
 

  • Preheat oven to 350 degrees Fahrenheit.
  • In a large mixing bowl, cream together shortening, butter and brown sugar, with an electric mixer. Beat until thoroughly combined.
  • Add in cold water.
  • In a separate bowl, sift dry ingredients together and slowly add to the sugar and butter mixture. Beat in all the flour mixture.
  • Once all ingredients are incorporated, turn dough out onto a sheet of waxed paper, and form into 10 inch log.
  • Refrigerate for at least 1 hour, until dough is firm enough to be sliced.
  • Cut log into 1/4 inch thick slices and place slices about 1 inch apart on an ungreased cookie sheet.
  • Brush top of slices with milk or egg wash and sprinkle with chocolate Jimmies. (If making these egg or dairy free, brush with almond milk.
  • Bake 8 to 10 minutes, or until edges are firm.
  • Transfer to a wire cooling rack and cool completely.
