This breakfast smoothie is quick and very refreshing.   I made this for the girls for breakfast while they were staying with me this summer. 

For a special treat, you can add 1 small can of sliced peaches. 

Summer Sunshine Smoothie

1 qt. pineapple sherbet
1 (6 oz.) can pineapple juice*
1/4 C of lemon juice

Place the sherbet into the blender.
Pour the pineapple and lemon juice over the sherbet.
Blend until smooth stopping once to scrape the sides.

*If you are using unsweetened pineapple juice taste the smoothie to see if it needs a little sugar added.  Add 1 t of sugar at a time until you have reached the desired taste.

Makes 4 servings
